Turkey Tetrazinni

I am sure you have asked the question, what am I to do with all the leftover turkey? Well, I have a recipe I am sure your family will enjoy. It is easy, not a lot of ingredients and can be made ahead of time. The perfect recipe for any busy family.

The recipe for my Turkey Tetrazinni is as follows:

Turkey Tetrazinni

In a skillet over medium heat saute 1 sweet onion in 1 stick of butter until onion is tender. Add 1 can evaporated milk, 1 can cream of chicken soup, 1 can mushrooms. 1-8 oz. pkg. shredded cheddar cheese and salt and pepper to taste.

In a large stock pot cook 1 box of your favorite pasta (I prefer Dreamfields spaghetti, penne or rotini pasta), drain and add to cheese mixture, add as much leftover diced turkey as you like (I used about 3 cups). Stir both mixtures together. Pour into greased 9x13 inch pan. Top with seasoned breadcrumbs. Bake in a 375 degree oven for about 40 minutes.

Variations of this recipe:

Add 1 bag of green peas
Add 3 c. chicken, pork or beef
Add 1 c. Swiss cheese or pepper-jack or Gruyere
Top with 1 c. Parmesan cheese
Add 1 pkg broccoli spears
