Beefy Vegetable Soup

I went back to my work kitchen  today after a few days off, I needed something simple to make for our staff. I came up with this soup, simple ingredients, great flavors and very filling. I hope you enjoy trying this recipe.

The recipe for my Beefy Vegetable Soup is as follows:

Beefy Vegetable Soup

In a stock pot brown 1 lb. ground sirloin and 1 sweet onion, add 4 quarts beef stock, 1 bag of mixed vegetables (or any frozen  vegetable you prefer), 1 can cream of mushroom soup and 2 c. of either rice, pasta or orzo, salt and pepper to taste, 2 t. Italian seasonings, 2 t. cumin,  2 T. garlic powder, 1 T. onion powder, 1 can northern beans and 1 can black beans. Cook until pasta or rice are tender.

Variations: add any of the following for a little something different:

1 can jalepenos
1 pkg. taco seasoning mix
1 large can crushed tomatoes
1 box zatarans dirty rice in place of pasta, rice or orzo
1 lb. chopped chicken or turkey
1 lb. smoked sausage (sliced and browned)
1 lb. shrimp
4 quarts chicken or vegetable broth instead of beef broth

This soup freezes well. Serve with a salad and some fresh baked crusty bread.
