Turkey Salad

This recipe just sounded so yummy I had to make it for dinner

Recipe for Turkey Salad is as follows:

Turkey Salad

In a bowl combine 2 c. turkey (broken into pieces), 1 handful of your favorite jute (I used pistachios, pecans and almonds), 1 handful of craisins, enough mayo to make creamy, and salt and pepper to taste. Mix well and add to sliced pumpernickel rolls.

I served these sandwiches with my Cajun Turkey Soup ad it was the perfect meal.

Cajun Turkey Soup

What to do with a leftover turkey carcass? Boil it down and make a satisfying bowl of soup.

Recipe for my Cajun Turkey Soup :

Cajun Turkey Soup

Cook down a turkey carcass, strain and add broth back to pot, add 1 box zatarans jambalaya rice, leftover turkey pieces, 1 can creamed corn, 1 can corn, 1 can stewed tomatoes, 1 can northern beans, 1 half package shredded carrots, salt and pepper to taste. Cook until rice and carrots are cooked and tender. Serve with homemade corn bread and enjoy!

Pumpkin Delight

Today I finally had a chance to make this recipe, it was super easy and scrumptious. I think you will enjoy making this one.

The recipe for my Pumpkin Delight is as follows:

Pumpkin Delight

Grease a 9x13 inch pan, in a large mixing bowl combine 1-15 oz. can pumpkin mix, 1 can evaporated milk, 3 eggs, 1 t. salt, 2 t. pumpkin spice. Pour mixture in greased pan. Sprinkle with 1 box of yellow cake mix, top with chopped pecans and sprinkle with brown sugar. Bake in a 350 degree oven for 50 minutes. Serve warm with your favorite cup of coffee or tea. Yum!

Turkey Tetrazinni

I am sure you have asked the question, what am I to do with all the leftover turkey? Well, I have a recipe I am sure your family will enjoy. It is easy, not a lot of ingredients and can be made ahead of time. The perfect recipe for any busy family.

The recipe for my Turkey Tetrazinni is as follows:

Turkey Tetrazinni

In a skillet over medium heat saute 1 sweet onion in 1 stick of butter until onion is tender. Add 1 can evaporated milk, 1 can cream of chicken soup, 1 can mushrooms. 1-8 oz. pkg. shredded cheddar cheese and salt and pepper to taste.

In a large stock pot cook 1 box of your favorite pasta (I prefer Dreamfields spaghetti, penne or rotini pasta), drain and add to cheese mixture, add as much leftover diced turkey as you like (I used about 3 cups). Stir both mixtures together. Pour into greased 9x13 inch pan. Top with seasoned breadcrumbs. Bake in a 375 degree oven for about 40 minutes.

Variations of this recipe:

Add 1 bag of green peas
Add 3 c. chicken, pork or beef
Add 1 c. Swiss cheese or pepper-jack or Gruyere
Top with 1 c. Parmesan cheese
Add 1 pkg broccoli spears

My Mom's Rum Cake

My mom made this rum cake every Christmas. Now I make this recipe every year. One of my favorite memories of our time baking together.

My recipe for My Mom's Rum Cake is as follows:

My Mom's Rum Cake

In a large mixing bowl combine 1 yellow boxed cake mix, 3 eggs, 1/2 c. Oil, 1/2 c. water and 1 /2 c. Rum, mix well. Pour mixture into greased baking pans and bake in a 350 degree oven until golden brown. While cooking in a saucepan melt 1 stick butter, 1/4 c. water, and 1c. sugar allow to a boil for 5 minutes. Remove from heat and add 1/2c. dark rum, stir well. Pour mixture over cakes until absorbed. The more sauce added the better.

More Thanksgiving Recipes

Happy Thanksgiving to each and every one of you. I wanted to share another favorite recipe.

My recipe for Pumpkin Cheesecake is as follows:

Pumpkin Cheesecake

Combine 2 pkgs cream cheese, 1 c. Sugar, 3 eggs, 1 T. Vanilla blend until smooth. In small graham cracker tart pans fill shells 1/2 full. Add 1/2 can of pumpkin mix to remaining cheesecake and blend. Place spoonfuls on top of each filled tart shell. Swirl with chop stick. Place on cookie sheet and bake in a 325 degree oven for 30 minutes. Remove and cool. Serve with cool whip and enjoy!

Thanksgiving Recipe for Grandma's Stuffing Balls

With Thanksgiving upon us I thought I would share a few of my favorite family recipes. These stuffing balls came about when I was first married 30 + years ago, what do you do when you combine different family traditions? Well, we did our best to improvise. I hope you will try this recipe, My German grandmother would stuff our turkey with this stuffing recipe, I altered it and now you can use it for a side anytime, or put on a sandwich for the day after. Thanksgiving Recipe for Grandma's Stuffing Balls

Grandma's Stuffing Balls

In a large bowl combine the following ingredients:

1 lb. ground sirloin
1 lb. sausage
2 eggs
1 stick melted butter
1 can french chestnuts (chopped)
1 lb. mushrooms (chopped)
1 onion (chopped)
salt and pepper to taste
1 pkg. plain croutons
1 small package gingersnaps

mix ingredients together and place in freezer until ready to use. Thaw and make into 2 inch balls, place on greased jelly roll pan and bake in a 350 degree oven for 40 minutes or until golden brown. Place on a beautiful platter and serve alongside your favorite turkey, beef, seafood or chicken dish. Enjoy!

Tuscan Chicken Chili


Tuscan Chicken Chili

Recipe for Tuscan Chicken Chili is as follows:

In a large stock pot add 6qts water and heat over medium heat, add 3 c. diced chicken (gfs sells cookeddiced chicken), 3 c. pinto or northern beans, 1 c. orzo, 1 bag mixed veggies,cook until orzo is tender add 2 T. garlic powder, 2 T. onion powder, 1 t.oregano, 1 t. cumin, 1 t. salt, 1 t. black pepper, 3 T. chicken base orbouillion, 1 T. chili powder, cook for another 5 minutes on low and serve overbaked potatoes or with chips, cheese and light sour cream.

Beefy Vegetable Soup

I went back to my work kitchen  today after a few days off, I needed something simple to make for our staff. I came up with this soup, simple ingredients, great flavors and very filling. I hope you enjoy trying this recipe.

The recipe for my Beefy Vegetable Soup is as follows:

Beefy Vegetable Soup

In a stock pot brown 1 lb. ground sirloin and 1 sweet onion, add 4 quarts beef stock, 1 bag of mixed vegetables (or any frozen  vegetable you prefer), 1 can cream of mushroom soup and 2 c. of either rice, pasta or orzo, salt and pepper to taste, 2 t. Italian seasonings, 2 t. cumin,  2 T. garlic powder, 1 T. onion powder, 1 can northern beans and 1 can black beans. Cook until pasta or rice are tender.

Variations: add any of the following for a little something different:

1 can jalepenos
1 pkg. taco seasoning mix
1 large can crushed tomatoes
1 box zatarans dirty rice in place of pasta, rice or orzo
1 lb. chopped chicken or turkey
1 lb. smoked sausage (sliced and browned)
1 lb. shrimp
4 quarts chicken or vegetable broth instead of beef broth

This soup freezes well. Serve with a salad and some fresh baked crusty bread.

Pammie's Egg Tart

Today I made a simple egg tart that was delicious. I hope you try it.

The recipe for Pammie's Egg Tart is as follows:

Pammie's Egg Tart

In a baby tart pan place a buttered slice of bread with no crust. In a bowl mix 2 eggs, 1 t milk, 1 piece of ham (chopped), 2 T shredded cheese and salt and pepper to taste. Pour into 2 or 3 tart pans. Bake in a 350 degree oven for 25 minutes or until golden brown. These were so cute and very yummy.

You can add spinach, jalepenos, roasted veggies and any cheese you prefer.

Pammie's Chili Salad

Today is Sunday Salad day, YUM! My sweet husband wanted me to make a pot of chili, one of his favorite things to eat. I decided to make the chili and enhance it by adding the chili to a dinner salad and VOILA...this is today's recipe.

Recipe for Pammie's Chili Salad is as follows:

Pammie's Chili Salad

In a stock pot saute 1/2 lb ground turkey, 1/2 lb. ground sirloin and 1 sweet onion, cook until meat is browned and onion is tender. Add 1 large can crushed tomatoes and 1 small can diced tomatoes, 1 pkg. chili mix, 2 t. beef base, 1/4 c. brown sugar, 1 can chopped chilies and salt and pepper to taste. Simmer for 50 minutes on low.

In a saucepan cook some rice of your liking. I chose to use a box of Zatarans Dirty Rice.

To serve place some chopped lettuce on a plate, add some rice, add some chili, add some fritos, add some shredded cheese and top with sour cream.
