Sunday Spinach Salad

Today is a beautiful day, sunny and warm, Spring has finally sprung. As promised a Sunday Salad to enjoy with you family. Super simple and delicious.

Recipe for Sunday Spinach Salad is as follows:

Sunday Spinach Salad

In a large skillet cook 1 lb of bacon until crisp, set bacon aside, allow to cool and crumble.
Add to warm bacon grease 1/3 c. Red Wine Vinegar, 1 T. Dijon Mustard, 1 T. Sugar or squeeze of honey, salt and pepper to taste, stir well and pour over bed of spinach leaves. Toss well. Top with fresh berries, crumbled blue cheese, bacon and chopped Red Onion.

If you would prefer you can cook your onion in bacon grease until tender instead of raw.

Add some grilled steak or chicken for a heartier salad, serve with bread and enjoy.
