Spicy Veggie Orzo Soup

Happy almost Easter. I made this spicy soup today at work and it got rave reviews by our staff. Super easy to make, not a lot of ingredients necessary. Try it and see what you think. Enjoy!

Recipe for soup is as follows:

Spicy Veggie Orzo Soup

In a large stock pot add 4 qts. water, 1 bag of frozen veggies, 2 cups of orzo (uncooked), 1 bag of meatballs (I used low sodium), 2 T. beef base, 2 small cans of white beans, 3 c. Salsa, bring to a boil and reduce heat to simmer, cook until orzo is soft, about 15-20 minutes. Add 1 T. garlic powder, 1 T. onion powder, 2 T. Italian seasoning, salt and pepper to taste. stir well, cook on simmer for another 10 minutes and serve.

Serve soup with a good crusty bread and enjoy.
