Happy Sunday, a wonderful day to spend with family and enjoy some much needed rest. After that it is time for dinner, what to make you might ask? I just got finished with a yummy chicken salad, all my recipes are a daily work in progress, depending on what sounds good and what I have available in my pantry.
Recipe for Sunday Chicken Salad:
Sunday Chicken Salad
On a large platter place some shredded romaine lettuce, top with the following;
1 small can garbanzo beans
1 small can black olives
1 sliced red apple
1 c. feta cheese
6 chicken tenders (cooked and sliced)
1 onion (sliced thinly cooked in 1 T butter and caramelized)
Prepare the following dressing and drizzle over salad:
In a bowl combine 1 c. olive oil, 1/4 c. balsamic vinegar, 1/3 c. honey, 1 T. mustard, 4 basil leaves (sliced), salt and pepper to taste, 1 t. minced garlic, mix well.
My husband and I so enjoyed this salad tonight, healthy, delicious and filling meal. You can add more or less ingredients and make your own wonderful dinner to share with your loved ones.
Now my husband and I are going to enjoy some delicious lemon pound cake and coffee.
