Pammie's Lemon Pound Cake

This cake recipe that has been requested over and over again. So here it is...My Lemon Pound Cake. So easy, versatile and delicious. I hope you try it, I promise if you make it, you will love it.

My recipe for Lemon Pound Cake is as follows:

Pammie's Lemon Pound Cake

Cream together 1 cup soft butter and 2 cups sugar until fluffy, add 6 eggs (fresh farmed raised are delicious), 3 c. flour (sifted), 1/2 t. salt, 1/4 t. baking soda, 1 c. sour cream (I prefer light), 1 t. vanilla (not imitation), and 1/2 c. lemon juice. Mix until all ingredients are incorporated, pour into 2 greased loaf pans. Bake in a 350 degree oven for about 1 hour and 20 minutes (depending on your oven). Cool slightly and place on a platter. In a bowl mix together 2 c. powdered sugar,  enough lemon juice and 1 t. vanilla to make the glaze pourable. Drizzle over cakes. Now you can enjoy a piece of yumminess.


Cranberry Orzo Salad

I made this salad at school today with the ingredients I had in our pantry, it was a HUGE hit. Enjoy!

In a large bowl slice 3 zucchini into small pieces, add 1c. shredded carrots, 1/2 c. raisins or craisins, 1/4 c. chopped red onion, 1 c. feta cheese, 4 c. cooked orzo.

In another bowl combine 1 c. olive oil, 1/2 c. red wine vinegar, 1/4 c. honey, 1/4 c. cranberry sauce, 1 T. orange marmalade, 2 t. garlic powder, 2 t. onion powder, 2 t. basil, 1 t. parsley, salt and pepper to taste. Mix well and pour over salad and toss.

On a beautiful platter, place some baby spinach leaves, top with orzo salad.

*To make a dinner salad you can add some grilled shrimp, chicken, steak or salmon. Top with additional feta and roasted pine nuts.
