Oh what a beautiful Sunday, my favorite day of the week. Today is Salad Sunday. My sweet daughter has an amazing salad she wanted me to share. I hope you enjoy this recipe.
Recipe for this salad is as follows:
Strawberry Orange Salad
Strawberries
Orange Segments or Mandarin Oranges
Pineapple Chunks or Tidbits
Sliced Almonds
4 T. Butter
4 T. Sugar
Teriyaki marinated chicken or *rotisserie chicken (sliced)
Mixed Greens, Spinach or Iceberg Lettuce (whatever you prefer)
Dressing for salad:
1/3 c. Orange Juice
1/4 c. Red Wine Vinegar
1/3 - 1/2 c. Canola Oil or 1/4 Canola Oil + 1/4 Olive Oil
1 T. Italian Dressing mix in a packet (the dry one, I prefer Good Seasons)
Squeeze of Honey, probably 2 T.
Mix together and pour over salad when ready to serve.
Melt butter in saucepan over medium heat. Add sugar and dissolve. Add in sliced almonds and cook over medium heat until slightly caramelized. Pour out onto silpat or parchment paper to cool. break and add on top of salad. *If you do not care for almonds you can use pecans.
On a large platter place your salad mix, add the fruit, chicken and almonds. *For an added crunch toss on some chow mein noodles. Drizzle with prepared dressing and enjoy.
This salad sounds so yummy I might make it for dinner along with some fresh veggie chips I am going to make next. I will let you know how they turn out. Now that you have a good dinner idea, go enjoy the great outdoors with your loved ones and have a fantastic rest of your day.
*are my added options. Be creative and add or subtract whatever you prefer. I might even add some water chestnuts.
