Chicken Chili

Today I made some soup for our staff and it was a big hit. Super simple to make, delicious. I hope you try this soup for your family.

The recipe for Chicken Chili is as follows:

Chicken Chili

Fill a large stock pot with 4 qts of water, bring to a simmer and add 2 c. chicken (diced), 2 c. black beans, 2 c. corn (I used frozen), 3 c. salsa, 1 T. cumin, 1 T. garlic powder, 1 T. onion powder, 1T. black pepper, 2 t. salt, and 1 T. cliantro (I used dried). Heat about 20 minutes on a simmer.

*If soup is too thick add some additional water and/or salsa.
*For extra heat add some crushed red pepper flakes.

Serve with baked tortilla chips, recipe as follows:

Slice flour tortillas into strips and place on a cookie sheet, spray with buttered baking spray, sprinkle with a mixture of 1 t. of each of the following spices; garlic powder, onion powder, cumin, paprika, black pepper, and salt (I prefer Kosher). Place in a 350 degree oven and bake until slightly browned and crunchy.
