Yesterday we went to have dinner with our daughter and son-in-law. I was asked by our son-in-law if I could make him a salad and post it on my blog. Well here is the salad I came up with for him. He loves bacon, no onions, no tomatoes. from there I can do what I want.
The recipe for Jeremy's Salad is as follows:
Jeremy's Salad
On a large platter place either sliced or torn romaine or baby spinach leaves. Cook one pound of bacon until crispy, remove bacon and set aside. Pour bacon grease into a cup and reserve for dressing. Add crumbled bacon over the bed of lettuce, sprinkle 2 c. cheddar cheese, and 1 c. berries.
Dressing Recipe:
Heat saucepan to simmer add 1 c. bacon grease, 1/3 c. red wine vinegar, 1/4 c. honey, 2 t. stone ground mustard, 2 T. strawberry jelly, 6 leaves sliced fresh basil leaves, 1 T. celery seed, salt and pepper to taste, heat through, place in cuisinart and puree until smooth. *don't tell Jeremy I added 1/4 cup carmelized onions*
*you can also add some carmelized onions to the salad and cherry tomatoes.
Before serving drizzle with dressing and toss. It was a delicious salad.
To make a dinner salad add some type of meat, and some croutons.
I hope you enjoy this salad as much as we did last night with our kids. Dinner with family is always a blessing.
