Spanakopita (spinach pie)

Today I have been thinking about recipes I love, not only to make, but eat and this one came to mind for my homemade Spanakopita (greek for spinach pie). I really enjoy making these for friends, they also freeze well. Try them I am sure you too will enjoy making these as much as eating them.

The recipe for Spanakopita is as follows:

Spanakopita (Spinach Pie)

In a large mixing bowl add 1 box spinach (thawed & chopped), 1/3 c. onion (chopped finely), 2 T. olive oil, salt and pepper to taste, and 3 c. crumbled feta. Mix well.

Remove filo dough from the package and unroll, slice the sheets in half lengthwise.

Melt 1 stick of butter in a bowl.

Separate 3 sheets of filo brush with butter and place 1/3 c. spinach mixture at one end and fold into a triangle and keep folding similar to a flag. Place on a cookie sheet and brush with butter. Repeat until all teh spinach filling is all gone. Make sure all the triangles are brushed with butter and bake in a 350 degree oven until they are golden brown.

Remove from the oven and place on a pretty platter and serve. Or you can cool and freeze and use later.

I sure hope you enjoy these. I would serve them with a Greek Salad.
