Pammie's Lo Mein & Fruit Salad

Sunday is my favorite day of the week to spend time in my kitchen creating yummy treats for my family. Today's creation is a lo mein dish I came up with for lunch. It was easy, nothing fancy and yet quite yummy. I hope you give it a try in your own kitchen.

The recipe for Pammie's Lo Mein is as follows:

Pammie's Lo Mein

In a large skillet cook 1/2 lb. bacon until cooked.

In another skillet add 2 T. olive oil, heat to medium high heat and saute the following chopped vegetables: 2 zuchinni, 1 red pepper, and 1 small head of broccoli until crisp and tender add salt and pepper to taste.

In a large stock pot heat water and cook a package of fresh lo mein noodles for 3 minutes. Drain noodles, add back to pot, add cooked vegetables and crumbled bacon, add 2 T. light soy sauce, 1 T. prepared chinese mustard, 2 T. brown sugar and 2 T. hot water, stir together and serve.





Fruit Salad Recipe is as follows:

Fruit Salad

On a beautiful platter add the following fruit (either mixed together and separated by fruit type)
1 Pkg. Strawberries, 1 pint Blueberries, 2 Kiwi, 1 Cantaloupe, 1 Pineapple, and 1  Pkg. Blackberries. In a bowl combine together 1 c. honey, 2 T. lemon or lime  juice, 1/4 t. Black Pepper, 1/4 t. salt and 2 T. Rosemary (chopped), drizzle over the fresh fruit and serve.

Pasta Chicken

Looking for something easy to make this weekend? Well, try this pasta chicken, it is easy, versatile and fast. Enjoy your weekend and relax.

Recipe for Pasta Chicken is as follows:

Pasta Chicken

Fill a large pot with some water, bring to a boil and cook your favorite pasta, my favorite is any type of Dreamfields pasta. Cook until al dente.

In a large skillet add 3 T. olive oil,1 t. butter, 2 T. paprika, 1 T. garlic salt, 1 T. Italian seasoning mix, and 1 t. black pepper,  heat over medium heat and add sliced chicken pieces, saute until golden brown. Remove from heat, add bacon pieces and chopped onion to pan and cook until bacon is browned and onion is caramelized, add 1 pint cherry tomatoes and heat until tomatoes begin to pop, slowly add 1 c. of  heavy cream and heat through, add 1 can of drained peas or 1 bag of frozen peas. In a large bowl combine the pasta, chicken, bacon and onion mixture, toss together and add 1/2 c. shredded parmesan cheese and 1 can black olives. Stir well and serve with your favorite bread and salad.

Green Pea Salad

What to make for dinner on a warm Spring day.....How about a Green Pea Salad? It makes a great side to any dish on the grill. It is refreshing, easy and very yummy. Try it this weekend, I am sure you will love it.

Recipe for Green Pea Salad is as follows:

Green Pea Salad

You can use leftover peas, frozen peas, or canned peas...In a large bowl add equal parts of sour cream and light ranch salad dressing (I use about 1 c. of each), add  1 t. of garlic powder, 1 t. dill weed, 1 t. oregano, 1 t. black pepper, 1 t. salt, 1 t. paprika, mix well and gently toss in peas and mix until coated.

Serve cold and enjoy.

Spanakopita (spinach pie)

Today I have been thinking about recipes I love, not only to make, but eat and this one came to mind for my homemade Spanakopita (greek for spinach pie). I really enjoy making these for friends, they also freeze well. Try them I am sure you too will enjoy making these as much as eating them.

The recipe for Spanakopita is as follows:

Spanakopita (Spinach Pie)

In a large mixing bowl add 1 box spinach (thawed & chopped), 1/3 c. onion (chopped finely), 2 T. olive oil, salt and pepper to taste, and 3 c. crumbled feta. Mix well.

Remove filo dough from the package and unroll, slice the sheets in half lengthwise.

Melt 1 stick of butter in a bowl.

Separate 3 sheets of filo brush with butter and place 1/3 c. spinach mixture at one end and fold into a triangle and keep folding similar to a flag. Place on a cookie sheet and brush with butter. Repeat until all teh spinach filling is all gone. Make sure all the triangles are brushed with butter and bake in a 350 degree oven until they are golden brown.

Remove from the oven and place on a pretty platter and serve. Or you can cool and freeze and use later.

I sure hope you enjoy these. I would serve them with a Greek Salad.

Homemade Banana Pudding

At school the other day we had some leftover bananas so I made some of my favorite banana pudding. It is very simple and oh so delicious.

The recipe if as follows:

Homemade Banana Pudding

In a large mixing bowl add 2 pkgs. instant vanilla pudding, 1 can sweetened condensed milk, 2 c. water and 2 t. vanilla, mix until blended, if you need more liquid add some more water. Add 1 large container of cool whip and mix well.

In a 9X13 inch pan place a layer of nilla wafers, top with a layer of sliced  bananas, then add half of the pudding mixture, now add another layer of nilla wafers, top with another layer of sliced bananas and add remaining pudding mix. Place some nilla wafers on top to decorate and place in the fridge until ready to use.

This is a great dessert to take to a dinner party or potluck.

Sunday Salad Leaves

Happy Mothers Day. Hope your day has been a blessed one as you spend it with your family. Our kids were with us today for lunch and my job was to make a salad. So here goes, a little something different and very versatile.

The recipe for Sunday Salad Leaves is as follows:

Sunday Salad Leaves

On a platter place romaine salad leaves, fill each leaf with the following ingredients: Sliced apples, grilled onions and mushrooms, shredded carrots, blackberries and strawberries (sliced).

I made a few savory leaves and a few with fruit. The favorite combination was a few slices on apples, shredded carrots, grilled mushrooms and onions.

Drizzle with a balsamic dressing. I made a homemade vinaigrette today.

In a bowl add 3/4 c. olive oil, 3 T. Balsamic Vinegar, 2 T. honey, 1 T. basil (chopped), 1 t. garlic powder, salt and pepper to taste, 1 T. hot pepper strawberry jelly. Whisk together and drizzle over the salad leaves.


i will experiment with this recipe and see what other options I can come up with. Let me know if you have any other yummy ideas.

Jeremy's Salad

Yesterday we went to have dinner with our daughter and son-in-law. I was asked by our son-in-law if I could make him a salad and post it on my blog. Well here is the salad I came up with for him. He loves bacon, no onions, no tomatoes. from there I can do what I want.

The recipe for Jeremy's Salad is as follows:

Jeremy's Salad

On a large platter place either sliced or torn romaine or baby spinach leaves. Cook one pound of bacon until crispy, remove bacon and set aside. Pour bacon grease into a cup and reserve for dressing. Add crumbled bacon over the bed of lettuce, sprinkle 2 c. cheddar cheese, and 1 c. berries.

Dressing Recipe:

Heat saucepan to simmer add 1 c. bacon grease, 1/3 c. red wine vinegar, 1/4 c. honey, 2 t. stone ground mustard, 2 T. strawberry jelly, 6 leaves sliced fresh basil leaves, 1 T. celery seed, salt and pepper to taste, heat through, place in cuisinart and puree until smooth.  *don't tell Jeremy I added 1/4 cup carmelized onions*

*you can also add some carmelized onions to the salad and cherry tomatoes.

Before serving drizzle with dressing and toss. It was a delicious salad.

To make a dinner salad add some type of meat, and some croutons.

Chicken Chili

Today I made some soup for our staff and it was a big hit. Super simple to make, delicious. I hope you try this soup for your family.

The recipe for Chicken Chili is as follows:

Chicken Chili

Fill a large stock pot with 4 qts of water, bring to a simmer and add 2 c. chicken (diced), 2 c. black beans, 2 c. corn (I used frozen), 3 c. salsa, 1 T. cumin, 1 T. garlic powder, 1 T. onion powder, 1T. black pepper, 2 t. salt, and 1 T. cliantro (I used dried). Heat about 20 minutes on a simmer.

*If soup is too thick add some additional water and/or salsa.
*For extra heat add some crushed red pepper flakes.

Serve with baked tortilla chips, recipe as follows:

Slice flour tortillas into strips and place on a cookie sheet, spray with buttered baking spray, sprinkle with a mixture of 1 t. of each of the following spices; garlic powder, onion powder, cumin, paprika, black pepper, and salt (I prefer Kosher). Place in a 350 degree oven and bake until slightly browned and crunchy.
