Leftover Christmas Soup

What to do with those Christmas leftovers? I have a soup recipe just for you. It only took a few hours to make. Our family enjoyed it very much along with a grilled cheese sandwich.

Leftover Christmas Soup

In a large stock pot place your leftover hambone and cover with water, cook over medium heat until ham falls off the bone or just use ham chunks covered in water. Add 1 container of leftover Chinese takeout rice, 1/2 c. Salsa, 1 bag of frozen carrots, 1 can of sweet peas, 1/2 pkg. dried fried rice seasoning mix, 2 T. Worcestershire sauce, 1 t. Garlic powder, 1 t. Onion powder, 1 t. Italian seasoning, salt and pepper to taste. Cook until heated through.

Serve with a grilled cheese sandwich and some fresh fruit.

Merry Christmas

Wishing you all a Merry Christmas. We made our favorite dish for Christmas morning, slumgullion, it is a 4th generation dish. Enjoy!

The recipe for slumgullion is as follows:

Slumgullion

In a large cast iron skillet sauté 1 lb. of bacon, set aside when browned, save the grease. Sauté 1 sliced onion and 6 sliced potatoes until browned. Add 10 beaten eggs and the bacon add some bacon grease cook until eggs are cooked. Serve with cheese grit casserole, fresh fruit and cinnamon rolls.

Yummy Potato Soup

As we welcome Winter and those cold dark nights, I am sure you will need some comforting soup to warm your insides. Try this pot of soup.

The recipe for Yummy Potato Soup is as follows:

Yummy Potato Soup

In a large pot fill with 5 peeled diced white potatoes and 1 sweet potato peeled and diced as well, cover with water and bring to a boil, add 1 c. Shredded carrots and cook until tender. Meanwhile sauté 1 onion sliced until golden brown, set aside while you sauté 1 lb. bacon, when browned add onions and bacon to soup over simmer, add 1/2. Jalepenos, 4 slices American cheese, 1/3 block of cream cheese, 1 small can cream of mushroom soup, 2 T chicken soup base and salt and pepper to taste.

Serve with soup and bread.

Vegetable Beef Soup

Today at school I made some Vegetable Beef Soup for our staff, it was easy to put together and used simple ingredients. A great quick night meal during the week, serve with a grilled cheese sandwich and enjoy.

The recipe for Vegetable Beef Soup is as follows:

Vegetable Beef Soup

In a large stock pot add 6 quarts of water, 3 T. beef base, 1 large can of stewed or crushed tomatoes, 1 bag of mixed vegetables, 1 lb. of cooked ground beef (turkey will work as well), 3 T. Italian Seasonings, 2 T. Garlic Powder, 1 T. Onion Powder, Salt and Pepper to taste, bring to a low boil and cook for 20-25 minutes. Serve with your favorite sandwich and salad.

For a little something extra when serving add a spoonful of sour cream.
For added spice you can add 1 can of jalapenos when cooking.
For a creamy soup add 1 large can of Cream of Mushroom Soup.

Leftovers can be frozen for later use.

Chicken and Rice Soup

Now that the cold weather has arrived it is time to make some yummy dinners that will warm you from the inside out. This soup will do just that.

The recipe for Chicken and Rice Soup is as follows:

Chicken and Rice Soup

In a large stock pot add 6 qts of water and bring to a low boil, add 1 c. uncooked rice, 3 c. chicken (diced and cooked), 2 c. black beans, 2. corn, 1 T. chili powder, 1T. cumin, 1T. garlic powder, 1T. onion powder and salt and pepper to Tate. Cook until rice is tender.

Added variety:

1 can jalapeños
10 pieces American cheese
1 c. sour cream
1 can stewed tomatoes

Chocolate Chip Macaroons

Today I made some cookies for a cookie exchange I am hosting, this recipe is delicious and easy. I hope you try it.

My recipe for Chocolate Chip Macaroons is as follows:

Chocolate Chip Macaroons

In a large bowl cream together 2 eggs, 1 lb. brown sugar, 2 sticks butter, 1/2 T. rum, 1/2 T. vanilla, and 1/8 c. water, add 2 c. flour, 1/2 T. baking powder, pinch of salt, 16 oz. shredded coconut, 1 bag mini chocolate chips and 1 small bag craisins. Mix until combined. Press into a greased jelly roll pan. Bake in a 350 degree oven for 30-40 minutes or until golden brown. Remove from oven, cool and cut into small squares. Macaroons can be made ahead of time and frozen until ready to use.
