Texas Sheet Cake

I was craving something chocolate.....so I decided to make an old stand by. Texas Sheet Cake is very easy, decadent and quick.

The recipe for Texas Sheet Cake is as follows:

Texas Sheet Cake

In a medium size pot over medium heat add 1 sticks of butter, 4 T. cocoa powder and 1 c. water, bring to a boil and stir. Remove from heat and stir in the following: 2 c. flour, 2 c. sugar, 2 eggs, 1/2 c. sour cream, 1 t. baking soda, 1 t. vanilla. Mix well. pour into 9x13 inch pan and bake in a 350 degree oven for 30 minutes.

Mix together frosting and spread onto hot cake once removed from the oven.

Frosting

Boil 1/2 c. butter, 4 T. cocoa, and 6 T. milk. Remove from heat and add 1 lb. confectioners sugar, 1 t. vanilla, and 1 c. nuts (optional). Pour over cake and spread.

You will love this cake. Serve with a great cup of coffee on a lazy afternoon and enjoy.

Homemade Chicken and Rice Soup

I made a huge pot of soup and had enough to share with the neighbors. It was easy and very comforting on a cool Fall day, serve alongside a grilled cheese sandwich. Yum!

The recipe for Homemade Chicken and Rice Soup is as follows:

Homemade Chicken and Rice Soup

In a large stock pot place leftover chicken carcasses and cover with water, add 1 onion (chopped), 1 bag of carrots, 3 sprigs of Rosemary, handful of Sage leaves, handful of Marjoram, handful of Basil Leaves, and handful of Oregano. All of my herbs were fresh from my garden, (amount can vary). 3 T. chicken base, 2 T. salt, 3 T. black pepper, cook for about 5-6 hours covered over simmering heat or until the meat falls off the bones. Stir every once in a while. Strain the broth from the bones and meat. Place broth back into the pot and cook over medium heat, pick off the pieces of meat and add back to broth along with the cooked carrots, add 1 c. rice (raw), 1 onion (chopped), 1 can corn, 1 can beans (whatever you have), 1 can jalapenos, 2 t. poultry seasoning, cook until rice is tender, add salt and pepper if needed.

For a twist you can add a box of thawed, frozen chopped spinach. You can also add pasta or ravioli in place of the rice.

This recipe is very versatile. Use what is in your pantry. Don't be afraid to experiment with different flavor combinations.

Once you know how to boil down a chicken carcass you can do anything with this soup. Enjoy.

Chicken Vegetable Orzo Soup

As the weather is cooling off, a warm bowl of soup is a comforting way to warm your insides. Today I made a pot of soup, the name never quite fit, it is a combination of southwestern and oriental flavors. Let me know if you come up with a better name :)

The recipe for my soup is as follows:

Chicken Vegetable Orzo Soup

Over medium heat cook the soup. Fill a pot 1/3 full with water add 3 c. chicken (cooked and diced), 1 pkg. frozen oriental vegetables, 1 red pepper (diced), 2 c. corn, 2 c. black beans, 2 T. chicken base, 1/4 c. soy sauce, 2 t. cumin, 2 t. onion powder, salt and pepper to taste, allow to simmer about 30 minutes. Before serving add 3 c. baby spinach leaves. Stir soup until spinach wilts and serve.

Serve in a bowl with fresh croutons.

I hope you enjoy this soup. It is quite hearty.

Marinated Cucumbers

This is an easy, simple side salad. It doesn't use many ingredients and takes no time at all to prepare. I hope you try it.

My recipe for Marinated Cucumbers is as follows:

Marinated Cucumbers

In a mixing bowl combine 1 c. red wine vinegar, 1/4 c. olive oil, 1 t. celery seed, 1 t. kosher salt, 1 t. black pepper, 1/4 c. honey, 2 T. lemon juice, mix well. Add 3 thinly sliced cucumbers, marinate for a couple hours until ready to use.

Serve with hamburgers on the grill, and some baked beans for a delicious dinner. Great meal to enjoy with friends.

Rustic Beefy Mac Soup

Today has been a beautiful day, filled with the brightest sunshine, warm breeze and memories of summer. The Fall is quickly upon us, football has begun, hockey is on its way and what better to warm your insides than a yummy bowl of homemade soup. Try this soup, I hope you enjoy it.

The recipe for Rustic Beefy Mac Soup is as follows:

Rustic Beefy Mac Soup

In a large stock pot add 3 T. Olive Oil and warm over medium heat, add 1 chopped Sweet Onion, saute until tender. Add 2 T. Beef Base, 6 c. Water, 2 c. Ground Beef (cooked), 2 c. Elbow Macaroni (cooked), 1 c. Corn, 1 c. Kidney Beans, 1 T. Italian Seasonings, 1 T. Garlic Powder, 1 t. Red Pepper Flakes, 1 can Cream of Mushroom Soup. Heat until warmed.

*add more or less water depending on desired consistency.

I would suggest serving this with a salad and or bread.

Scrumptious Potato Soup

Finally back into the swing of things, sorry it has been a while. Today I made some Scrumptious Potato Soup, very easy and satisfying.

Scrumptious Potato Soup 

Recipe for Scrumptious Potato Soup is as follows:

In a large pot saute 2 c. shredded carrots, 1-8oz. container of mushrooms (chopped), 2 c. celery (diced), and 1 large red onion (chopped) in 4 T. olive oil, add salt and pepper to taste, cook until veggies are tender, add enough chicken broth to cover 2 inches above veggies, add 8 potatoes (peeled and diced), 1 T. garlic powder,  and 1 t. onion powder, cook until potatoes are tender.  Make a flour mixture of 1/2 c. flour and 1 c. water, mix well, add to soup and stir, add 8 pieces of american cheese and 1 can cream of mushroom soup. Heat through until cheese is melted.
Enjoy with a salad and some bread. Delicious.

For an added layer of flavor....add some corn and or black beans.
