Not Your Mom's Tomato Soup

Abundant tomato crop......I have an easy, scrumptious, hearty soup for you to make. This soup is not only very tasty but elegant.

The recipe for this soup is as follows:

Not Your Mom's Tomato Soup

In a large stock pot add 6 medium large tomatoes (cut into 4 pieces) and 20 cherry tomatoes, add 1 c water, 2/3 c. sugar, 2 T. chicken bouillon, 2 T. minced garlic (I prefer the kind in the jar), 2 t. salt and 2 T. pepper, cover and cook over medium heat for 30 minutes. Add 2 cut up chicken thighs, 1 can cannellini beans (white kidney beans), continue to cook until chicken is done, about another 45 minutes. Strain soup, add bean mixture to food processor and pulse until creamy, add 6 basil leaves and continue to pulse. Add back to broth and stir well.

 *If you desire a thinner soup, add some heavy cream, milk or water.

In a pretty soup bowl add 1 c. of cooked basmati rice in the center, ladle soup around the rice and top with a small basil leaf.


I hope you enjoy this soup. My husband called it a comforting bowl of deliciousness.
