Yummy Sunday Salad

It is Sunday once again and as promised a salad. This is a combination of creativity and leftovers. I hope you try it and enjoy some rest and time with your loved ones today.

Recipe for my Yummy Sunday Salad is as follows:

Yummy Sunday Salad

On a large platter place a bed of iceberg or romaine lettuce, top with 1/2 lb. cooked bacon, 1 breaded, cooked chicken breast cut into strips, 1 c. rice, 1 c. black beans, 10 fresh cherry tomatoes from your garden,  some fresh herbs from your garden and sprinkle with shredded cheese. Drizzle with your favorite ranch salad dressing and enjoy.


Like I said some creativity and leftovers. Any meat/ veggies and herbs with work. Try this recipe with pork, steak, or seafood and any combination of cooked veggies. I am sure you too with love it. Top with homemade croutons for an extra crunch.

Pammie's Pasta

I want to share with you a delicious pasta dish that is light and flavorful. You can enjoy this for lunch or supper. Serve it with some bread and a fresh fruit salad. Try it, I am sure you will enjoy it.

My recipe for Pammie's Pasta is as follows:

Pammie's Pasta

In a large stock pot add water, heat and cook your favorite pasta, I used Dreamfields Rotini. Drain pasta and set aside.  In a large skillet heat 2 T. butter or olive oil, add 1 bunch of chopped, cleaned asparagus and 1 pkg. cleaned, chopped mushrooms, saute until tender. In another small pot add a container of marscapone, 3 T. heavy whipping cream, salt and pepper to taste, 1/4 c. chicken stock, 1/4 c. parmesan cheese, heat until ingredients melt and are smooth. Combine all ingredients together and mix. Add more salt and pepper if desired. Add some chopped basil for added flavor.

Enjoy your pasta lunch/supper.

My Favorite Snack

This recipe has been one of my favorite things to eat ever since I was a little girl. It is so easy, great for parties and delicious.

Recipe for My Favorite Snack is as follows:

My Favorite Snack

On a cookie sheet place a layer of Triscuits, top with 2 small slices of hot dogs, and finally a cube of your favorite cheese (mine is cheddar), place in a 350 degree oven and cook until cheese melts about 10 minutes.

These are so easy and yummy. Enjoy making them with your family.

Korean Steakhouse Salad Dressing

WOW! Feels like I have been gone forever. Well I have been away from home for 5 weeks, visiting kids, work trip with my husband and helping my mom after sugery.....I have been out of my kitchen.....so looking forward to starting back and getting into my routine. While I was away I ate at a wonderful little Korean Steakhouse with my mom. The owner gave me this recipe....enjoy.

The recipe for Korean Steakhouse Salad Dressing as as follows:

Korean Steakhouse Salad Dressing

In a blender or food processor combine the following ingredients, 1 carrot (peeled), 1 Large Sweet Onion (peeled), 1/4 t. fresh ginger, 1/2 granny smith apple, 8 oz. white vinegar, 4-6 oz. soybean oil (more or less depending on thickness desired and salt and pepper to taste.

Add dressing to any salad combination you would like, for a dinner salad add some grilled beef, chicken or shrimp.

Jordan's Awesome Burgers

While visiting my son and daughter-in-law in Denver, we had the chance to try some new recipes. This one was delicious. I hope you will take the time to give it a try. You will NOT be disappointed. Shared these burgers with some friends last night and we all enjoyed them so much, they will be made again. Use your imagination and use other meat, such as ground chicken, lamb or turkey. Enjoy!

Recipe of Jordan's Awesome Burgers is as follows:

Jordan's Awesome Burgers

2 lbs. Ground Sirloin
1 egg
3/4 c. Italian Bread Crumbs
1/4 c. evaporated milk
3 T. Worcestershire sauce
1/4 t. ancho chili pepper
1T. minced garlic
salt and pepper to taste.

Mix together the above ingredients and allow to marinate for at least 1 hour. In the meantime place some oak planks in some water to soak. Prepare your bbq grill. Place planks on grill and add burgers on top of planks, cook to desired doneness. Serve on your favorite rolls, will provolone cheese, homemade onion rings and a side of German potato salad (see previous recipe post).

Invite some friends for dinner and enjoy an evening of great food, fun and fellowship.
