Roasted Potatoes

Need a quick delicious side dish? Try my recipe for Roasted Potatoes...it is very versatile and tasty.

Recipe for Roasted Potatoes is as follows:

Roasted Potatoes

In a large bowl add 1 c. olive oil, 2 T. paprika, 2 T. garlic salt, 2 T. italian seasonings, 1 t. black pepper, 1 t. salt, and 1 t. cumin. Mix well and add 8-10 diced potatoes (I leave on the peel), toss and place on a baking sheet. Cook in a 375 degree oven for 45 minutes or until tender.

*you can make the same recipe with an assortment of 4 c. of cubed veggies* (my favorite combination is zucchini, cherry tomatoes, squash, sweet onion, mushroom, and sweet potatoes)

If you would like, use the leftover roasted potatoes and add some cooked bacon and onion, 1/3 c. red wine vinegar, 1/4 c. olive oil, 2 T. fresh herbs (I prefer basil, parsley and chives), salt and pepper to taste. Mix well and serve. Voila, now you have my grandmothers German Potato Salad.

Regular Potato Salad 

In a bowl mix together 1 c. mayo, 2 T. yellow mustard, 1 t. celery salt, 2 hard boiled eggs (chopped), 1 stalk celery (diced), 1/3 sweet onion (diced) and salt & pepper to taste and 3c. roasted potatoes, mix well and serve.

*add some cooked crumbled bacon for a little something extra.

Another use for roasted potatoes:

Add potatoes to some scrambled eggs with cooked onions and bacon, a delicious breakfast.

Homemade Lettuce Wraps

While visiting with my kids out in Denver we went to PF Changs for dinner the other night. My daughter-in-law loves their lettuce wraps, so I decided to come up with a recipe you can make at home and enjoy the same flavors anytime. Hope you will try this recipe.

My recipe for Homemade Lettuce Wraps is as follows:

Homemade Lettuce Wraps

In a saucepan saute either 1 lb. of  ground hamburger, turkey or chicken until golden brown. Remove and allow to drain on a paper towel; add 2T. olive oil to a saute pan and add 1/2 chopped onion, 1 stalk diced celery, 1/2 c. chopped carrots, 1 can chopped water chestnuts, 1t. minced garlic, and salt and pepper to taste;  cook until veggies are tender. In a bowl add  3T. light soy sauce, 1T. cornstarch, 1T. honey, 1T. Hosin Sauce, and 2-3T. water, mix well.  Add the veggies, meat and sauce back into the saute pan and  heat through. Spoon into lettuce leaves, or Boston Lettuce. Enjoy!

Jay's Marvelous Meat Marinade

I wanted to share with you my husband's recipe for a delicious and very versatile meat marinade that can be used on anything. Wish he could make this while fishing deep in the heart of Canada.

Recipe for marinade is as follows:
In a 9x13 pan combine 2 c. olive oil, 2 c. lemon juice, 2 T. minced garlic, 1-2 T. red pepper, 1 T. black pepper, and 2-3 T. kosher salt. Mix together and add whatever type of meat or seafood you prefer. Place on your grill and enjoy.

Marinate for up for 4 hours. I usually only marinate for 30-60 minutes covered on my counter.

This is my favorite go to recipe when I need a quick dinner or something amazingly delicious.

Southern Corn Pudding

Needing some comfort food, try this recipe for my Southern Corn Pudding. it is a perfect side dish to anything on the grill. I hope you enjoy making this dish, it is easy and yummy.

The recipe for Southern Corn Pudding is as follows:

Southern Corn Pudding

Grease a casserole pan and set aside. In a large bowl mix together one box jiffy corn mix, 1 egg, 1 stick melted butter, 1 can corn with water, 1 can creamed corn, and 1/2 c. sour cream. Mix together and pour into prepared dish. Bake in a 350 degree oven for 1 hour or until golden brown.

Sure hope you try this for your 4th of July celebrations. It will be the hit of the party.

Oven Fried Chicken

Hello from Denver, Colorado....enjoying a wonderful visit with my kiddos. Cooking out here so far has been easy, a little less heat and a little less time. Tonight my son and I are home together so I decided to make something yummy and easy. One of my favorite go to meals is Oven Fried Chicken, I learned how to make this recipe from my sweet, mother-in-law, Judie. Thanks mom. Enjoy!

The recipe for Oven Fried Chicken is as follows:

Oven Fried Chicken

In a 9x13 inch pan add 1 stick of butter, heat oven to 375 degrees, place pan in oven and melt butter, dip boneless, skinless chicken breasts in flour and then dip in the melted butter. Sprinkle with salt and pepper and bake for 45-60 minutes until golden brown.

Serve with loaded mashed potatoes and green beans.

Some recipes to use with leftover chicken:
Slice and add to your favorite salad
Chop and make your favorite chicken salad
Add to cooked pasta with tomato cream sauce

Blackberry Freezer Pops

Need a great, fun snack for the kids. These freezer pops are so simple, creamy and delicious.

The recipe for Blackberry Freezer Pops is as follows:

Blackberry Freezer Pops

In a skillet place some washed blackberries (I used about 20), 1 T. sugar and 1 T. water, simmer until berries are tender and easy to smash. Allow to cool.

In a bowl add 1 pkg. sugar-free instant pudding mix (I used cheesecake), vanilla or french vanilla would work also. Add 1 c. milk, 1 small container light cool whip, and the cooled berries. Stir and place in popsicle molds and freeze. Enjoy.

Allow your imagination to create your own favorite combinations.

Simple Shrimp Salad

YAY! Sunday is here...beautiful, restful and a wonderful time to spend with family around a table of delicious foods, sharing stories and making memories. 


My recipe for Simple Shrimp Salad is as follows: 


Simple Shrimp Salad (always reminds me of my grandmother) 


Buy 1-2 lbs. of the best Shrimp you can find. Clean and rinse in a bowl and set aside until ready to use. Use a beautiful platter and place some pretty lettuce leaves of your choosing, I like to use romaine. Heat some water in large pot and cook your favorite pasta (I use Dreamfields). In another large bowl combine the shrimp with your favorite mayo, salt and pepper to taste, 1 stalk celery (diced), 1/4 sweet onion (diced), you can add 1 c. shredded carrots if you would like. Place shrimp salad over the pasta, decorate with the following: Hard boiled eggs (sliced), Artichoke hearts, Pickles (your favorite), Black Olives, Green Olives, Palm hearts, Cherry Tomatoes, Sprinkle some parsley on top and a pinch of salt and pepper. Serve with some hard rolls and enjoy!

Friendly Chicken Dish

We had a friend for dinner the other night and I came up with a fast recipe that was quite good. It was easy to make and looked pretty on the plate. Try this recipe I am sure you will like it.

My recipe for Friendly Chicken Dish is as follows:

Friendly Chicken Dish

In a large skillet heat 3 T. olive oil, add 3 chicken breasts (diced), 1 T. paprika, 1 t. garlic salt, 1 t. Italian seasoning, saute until slightly golden, add 1 pkg. mushrooms (sliced), 1 sweet onion (diced), 2 T. chopped jalapeno peppers, saute until browned. Turn heat to low and add 1 T. fresh basil (chopped), 10 cherry tomatoes, 1/4 c. heavy cream. Stir well and pour over your favorite pasta, top with grated Parmesan cheese.
